Yes! my czech grandmother also made her spaetzle with the spoon off the cutting board method and I much prefer that over the smaller bits you get from a spaetzle maker. More like gnocchi and better for absorbing gravy!

My grandmother called the plate-and-spoon method spaetzle “fleckle”-though I have no idea how that might be spelled, or if she simply made that name up for us kids. You’ve got me hankering for it, too.

Eldorado Kitchen has great spatzel. But the short ribs or steak is killer.

Carneros Bistro and Wine Bar currently has spatzle on their dinner menu. It comes in the local Petaluma game hen dish.
