Chewy Chocolate Gingerbread Cookies


chocolateginger2.jpgThough it may sound odd, the chocolate works really well in these snappy gingerbread cookies. Letting the batter cool in the fridge, however, is key to getting a great cookie. The big grains of sugar make the cookies sparkle like little diamonds.

Chewy Chocolate Gingerbread Cookies w Chocolate Chunks
Recipe: Hahagrl

1 1/2 c plus 1 T all purpose flour
1 1/2 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/2 tsp ground nutmeg
1 T unsweetened cocoa powder
1 stick unsalted butter, room temp.
1 T freshly grated peeled ginger
1/2 c packed dark brown sugar
1/2 c unsulfured molasses
1 tsp baking soda
1 1/2 tsp boiling water
7 oz good quality semisweet chocolate-cut into 1/4 inch chunks
1/4 c Turbinado (or similar) granulated sugar

In a medium bowl sift together flour, ginger, cinnamon, cloves, nutmeg and cocoa. In bowl of an electric mixer fitted w/ paddle attachment, beat butter and fresh ginger on meduim speed until lightened-about 4 min. Add brown sugar, beat until combined. Add molasses, beat until
combined.

In a small bowl dissolve baking soda in boiling water. Beat half of the flour mixture into the butter mixture. Beat in baking soda mixture, then remaining half of the flour mixture. Mix in chocolate.

Place the batter onto plastic wrap. Roll, pat out to a log about 1 inch thick.  Refrigerate until firm-2 hours or overnight.

Preheat oven to 325 degrees. Line baking sheet w/ parchment or Silpat. Cut into approx 24 pieces and roll into 1 1/2 inch balls. Place 2 inches apart on baking sheet. Chill another 20 minutes if you have time. Roll in granulated suger. Bake until surfaces just begin to crack 12-15 minutes rotating halfway through. Let cool 5 minutes then transfer to a wire rack.
