blondie2.jpg More blondie than brownie, these bar cookies are a snap to make and have a rich, butterscotch flavor. The batter will barely cover the bottom of the pan, but puffs up quite a bit while cooking. Cut into small pieces after the brownies are well cooled.

1 cup butterscotch chips
1/2 cup sweet butter
2 eggs
2/3 cup packed brown sugar
1 tsp vanilla extract
1 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
2 cups miniature marshmallows
2 cups semi-sweet chocolate chips
1/2 cup chopped walnuts (optional)

Method:
In a saucepan over low heat, melt butterscotch chips and butter; cool for 10 min.  In a mixing bowl, beat eggs, brown sugar and vanilla.  Add butterscotch mixture; mix well.  Combine flour, baking powder and salt; add to batter and mix well.  Stir in marshmallows, chocolate chips and nuts.  Spread into greased 13 x 9 x 2" baking pan.  Bake at 325 degrees for 25-30 min or until brownies test done with a toothpick.  Cool completely before cutting.
