The batter on these gets a little spongy and oily, but don’t worry — they end up tasting a whole lot like the coconut almond candies you love. They’re also a bit more virtuous than some cookies, with the fat coming from almond oil rather than butter.
Almond Joyous Cookies

1 1/2 cups almond butter
1 c sugar
2 large egg whites
1/2 cup flaked coconut
1/2 cup semi-sweet chocolate chips
Preheat oven to 350 degrees. Mix almond butter and sugar well. Add egg whites and blend well. Stir in coconut and chocolate chips
Roll into walnut sized balls with dampened hands. Place on ungreased cookie sheet and flatten with a fork dipped in sugar.
Bake 9-11 minutes
Yield 2 1/2-3 dozen
